Totally agree! Batch cooking has been my salvation! I’ve even invested in a larger freezer to stock it! That way when I’m in the mood for cooking – I simply get it out of the way and we’ve got at least enough meals ready for the days I don’t feel like cooking!
The other thing I’ve discovered recently is – frozen vegetables are actually good for you! They retain more vitamins and are handy to have in the freezer for quick meals!
